Talking about olive oil in Spain seems a redundancy in itself. It is one of the products that the whole population is most proud of for many reasons. Just by saying that it is included in those classified as 'Superfoods', we can already get an idea of the benefits it can provide. But for some years now, it has had a companion that seems to be here to stay: coconut oil.

Focusing more on sport, the so-called 'liquid gold' is rich in good quality fatty acids, which promote the generation of muscle mass through the synthesis of testosterone and growth hormone. But if you are looking to lose weight, it can also help you, as it increases fat oxidation and its elimination. Finally, and leaving many other properties by the wayside, it is a good supplement for post-workout recovery, as it has anti-inflammatory properties. A wonder of nature, no doubt about it.

Why has coconut oil come on so strong?

All things considered, it may seem that coconut oil has little to do to be a valid competitor, but the reality is that it has arrived to be a perfect ally to olive oil.

It shares several of the benefits described above, such as anti-inflammatory effects, but it also has its own. A good example is its ability to eliminate abdominal fat, one of the areas where it is most difficult to lose weight and tone up. As far as cholesterol is concerned, this product has a very particular way of fighting it: its large amount of saturated fatty acids increases HDL cholesterol (or 'good' cholesterol), preventing LDL ('bad' cholesterol) from increasing.

In addition, it has a very special property: it has no taste. You can forget about the typical dilemma that arises when you know that something is good for your sporting performance, but you don't like its taste at all. With coconut oil, you get the full flavour of your chosen food.

The extra virgin olive oil scam

The Organisation of Consumers and Users -better known as OCU- brought to light in October 2018 a study in which it claimed that half of the olive oils that are marketed as Extra Virgin, do not meet the minimum requirements needed to obtain this valuable designation.

WHAT IS THE DIFFERENCE BETWEEN VIRGIN AND EXTRA VIRGIN OLIVE OIL?

Extra virgin olive oil is made from pure cold-pressed olives, whereas regular olive oil is a blend, which includes both cold-pressed and processed oils. Any cold-pressed oil that does not meet extra virgin standards is refined to get rid of undesirable impurities, giving the oil a more neutral taste and a lighter colour.

WHAT DOES VIRGIN OIL MEAN?

The word "virgin" indicates that the olives have been pressed to extract the oil; no heat or chemicals have been used during the extraction process, and the oil is pure and unrefined. Virgin olive oils contain the highest levels of polyphenols, antioxidants that have been linked to better health.

WHAT ARE FLAVOURED OILS?

Flavoured oils are invaluable summer ingredients, at home on salads, grilled vegetables, meat, fish or just about anything else, and are also among the simplest exotic cooking creations imaginable. Start with a decent extra virgin olive oil and any herbs or flavourings you like.

HOW TO FLAVOUR THE OIL?

One way is by cold infusion and the other (you guessed it) is by hot infusion. Mixer/grinder to pulverise the herbs, or crush them and then let them steep in the oil of your choice until the flavours have blended. Then strain the oil properly, and put it in the fridge. That's it!
