Bizcocho de calabaza alto en proteína
¿Qué necesitas?
- 1 bol grande para la mezcla de ingredientes húmedos
- 1 bol mediano para la mezcla de ingredientes secos
- 1 batidor de varillas manual o eléctrico
Ingredients
- 250 gramos de calabaza (puré o natural)
- 3 huevos grandes
- 125 gramos de yogur griego natural (o vegetal para versión vegana)
- 60 gramos de aceite de coco derretido (o aceite de oliva suave)
- 5 ml de extracto de vainilla (1 cucharadita)
- 100 gramos de harina de avena Puedes escogerla natural o con sabor. En caso de escoger la avena natural, puedes añadir el endulzante de tu gusto para lograr un sabor más dulce (miel, stevia, azúcar etc.)
- 40 gramos de proteína en polvo (sabor neutro o vainilla)
- 8 gramos de levadura en polvo (1 cucharadita colmada)
- 3 gramos de bicarbonato de sodio (½ cucharadita)
- 1 cucharada de canela
- Opcional: una pizca de nuez moscada, jengibre y /o clavo
Instructions
- Comienza precalentando el horno a 180 °C arriba y abajo. Engrasa un molde de bizcocho o cúbrelo con papel vegetal, que utilizaremos una vez la masa se encuentre lista.
- En un bol, comenzamos mezclando los ingredientes húmedos: añade el puré de calabaza, los huevos, el yogur, aceite, edulcorante (si has decidido incluirlo) y esencia de vainilla. Bate con un batidor manual o eléctrico de varillas hasta que quede homogéneo.
- En un bol distinto, mezcla y añade los ingredientes secos: harina de avena, proteína en polvo, levadura, bicarbonato y las especias de tu preferencia.
- Integra ambas mezclas con la ayuda del mismo batidor, poco a poco, removiendo suavemente para no perder esponjosidad.
- Vierte la mezcla en el molde para horno.
- Hornea entre 35 y 45 minutos, hasta que al pinchar con un palillo salga limpio.Una vez se haya horneado por completo, deja enfriar primero en el molde unos minutos y después sobre una rejilla. Y listo.
